Varietal Cava: Cava made from a single variety of the grapes permitted by the Cava Denomination of Origin Regulatory Council. By law, it must contain at least 85% of that variety.
Vine shoot: the new growth that a vine produces every year. A vine shoot sprouts from a bud on a one-year-old “cane” (a shoot from the previous season). The bud contains all the basic components that will become shoots, leaves, inflorescences (future grape bunches) and tendrils when it sprouts, as well as the buds that will produce new shoots the following year.
