Disgorgement: the process of extracting the lees from the second fermentation, during which the neck of the bottle is immersed in a cooling liquid that causes it to freeze. This facilitates expulsion without losing carbon dioxide gas. It can also be done manually.
Dosage: this operation consists of adding licor de expedición (expedition liqueur) to the Cava: its sugar content will determine the type of Cava.
