The link between Mestres and the world of wine dates back to 1312, with the founding of the winery by the ancestors of the current rectors of the house. For 30 generations, they have managed to preserve the tradition and philosophy of making the first wines created by the family, which to this day are still obtained completely by hand.
The innovative spirit of Josep Mestres led him to create in 1945 the first sparkling wine without adding sugar after the manual disgorgement, which he called Visol (only wine), it was the first Brut Nature in history. This philosophy continued with his son Antonio, who introduced the wooden barrels in the first fermentation to obtain the base wine of the future cava.
Long aging is precisely one of the hallmarks of sparkling wines from Mestres. In fact, currently its cavas are aged in the bottle for more than 4 years and even 40 years, thus seeking greater integration of carbon and activating the process of autolysis of yeasts.
