Our cellar is the smallest and most personal one in Sant Sadurní d’Anoia and we are the third generation of winemakers. We defend an independent concept, separate from wide distribution, but never forgetting the respect our craftsmanship deserves and our raison d’être: to elaborate artisan cavas of quality and release the culture of cava.
Limiting the bottles that we produce annually allows us to be faithful to the purest traditional artisan method. We only use local grapes from Penedés. During the first press we obtain the flower of the grape juice, which we later submit to controlled fermentation. We then use the stacking process for its second fermentation and the stacking rack for the manual shake. The cutting of the neck of the bottle is done on the fly. It closes the parenthesis of a delicate process of maturing. Our specialty: long aging cavas (reserves and great reserves) and the elaboration of brut nature without added sugar after disgorging (its moderate consumption is suitable for diabetics). Cavas, as we like to define them, in its purest form.
