Theory is important, but practice, tasting and the development of each nuance, as well as the gustatory appreciation of the product’s quality, are key to any sommelier, gastronomy or related course.
For this reason, as part of the continuous training on behalf of D.O. Cava, we support and collaborate with the Wine Business School in Vilafranca del Penedès for its specialised training programmes.
Between May and early June, we were involved in the Professional Sommelier course and the Sommelier Professionalism Certification course, both given by journalist and wine expert Ramón Francàs.
The Technical Director of D.O. Cava taught both courses, with the aim of informing students about the denomination’s exacting regulations for Cava production, and to show the results of these strict conditions through the tasting of a selection of Cavas representative of the different aging of de Guarda and Guarda Superior.
The approximately 15 students of each cohort have a high level of knowledge about wines and beverages, and most of them are already active in the sector. This new generation of demanding sommeliers has a solid foundation in Cava.
