La Pedrera, the emblematic modernist building in Barcelona, designed by Antonio Gaudí, which is the eighth-most visited monument in Spain, was the ideal venue for an extremely select paired tasting: Cava de Guarda Superior Gran Reserva and Paraje Calificado with 100% Iberian acorn-fed ham from the Jabugo Protected Designation of Origin.
On the weekend of 23 and 24 October, around 50 people enjoyed a luxury tasting open to all. The sommelier and Cava expert journalist, Sílvia Culell, aided by the head of communications for Jabugo P.D.O., Lucía García, explained the perfect harmony between long-aged Cavas and Iberian ham.
A total of six Cavas de Guarda Superior were tasted, accompanied by three of the main parts: the unctuous and balanced maza (juicy rear part of the leg); the babilla (leaner front part of leg), intense, with a balance between salt and sweetness; and the contramaza or punta (top of leg, or shoulder), complex and complete.
A superb pairing: Cava and ham complement each other perfectly. The organoleptic properties of each of these unique products can be appreciated, and also the harmony of tasting both together can be enjoyed. Cava + Iberian ham = an exquisite taste sensation on the palate.
