Ingredients
1 lb orecchiette pasta
6 slices Jamón Consorcio Serrano, toasted and cut into small strips
8 oz mushrooms, thinly sliced (shiitake, portobello, or cremini)
1/3 cup truffled cheese, grated
1/4 cup white wine
1 tbsp unsalted butter
2 tbsp extra virgin olive oil
1 large shallot, finely chopped
2 garlic cloves, finely chopped
Zest of 1 lemon
1/2 tbsp fresh rosemary and 1/2 parsley, finely chopped
Salt and freshly ground black pepper
1/2 cup pasta cooking water (reserved)

Cook the pasta in salted water until al dente.

Reserve 1/2 cup of the cooking water, drain, and set aside.

In a skillet, cook the jamón until crispy. Set aside.

In the same skillet, add one tablespoon of olive oil and sauté the shallot and garlic over medium heat until tender.

In the same skillet, sauté the mushrooms with the remaining tablespoon of oil and the butter over medium-high heat for about 3 minutes, until golden.

Add the sautéed shallots and garlic, the pasta, truffle cheese, and a bit of the reserved cooking water.

Toss gently over low heat until a light sauce forms.

Turn off the heat and adjust salt if needed.

Fold in the crispy jamón, lemon zest, parsley, rosemary, and freshly ground black pepper to taste.
