The renowned professional sommelier and journalist, Sílvia Culell, an expert in wine communication, as well as a member of the BulliFoundation’s Bullipedia editorial team, offered an unprecedented tasting under the title: "The origin of Cava".
During the tasting, Sílvia spoke at some length about the new regulations approved by the Regulatory Board in 2020, and described clearly and intelligently the project of segmentation and zoning of the D.O. Cava. She explained the terminology of Cava according to its aging (Cava de Guarda and Cava de Guarda Superior); the new quality seals and requirements; the recently introduced integral producer stamp; and the D.O. Cava territory, with its corresponding zones and sub-zones.
Sílvia’s presentation was accompanied by a tasting of different Cavas, looking at the rich microclimates and soils of the D.O. Cava, as well as the various grapes varieties allowed by the D.O.
This D.O. Cava wine event was attended by around 30 professionals from the sector, the specialist press, and wine and food lovers, adhering to the current hygiene and safety measures at all times.
