The new segmentation and zoning regulations, which the Cava Designation of Origin has been working on since 2018, were approved by the Ministry of Agriculture, Fisheries and Food in June 2021.
The Cava Designation of Origin has offered active training exclusively for the affiliated to the D.O. so that the regulations can come into force, and to see the ambitious changes in the bottles endorsed by the exigent D.O.
The entertaining and informative online sessions were aimed at training wineries and winegrowers on the new implementations and digital tools that they will have at their disposal, so that together we can continue to improve the quality characteristics of Cava.
The new labelling regulations, the presentation of the new labels and the application of the distinctive seals such as integral winemaker, as well as the registers of the Guarda Superior vineyards, were the main topics of the meetings.
With the new regulations "we have opted for maximum traceability and quality (...) all of which places D.O. Cava at the forefront of quality sparkling wine designations of origin", according to the president of the Regulatory Board, Javier Pagés.
