The Cava Designation of Origin and its most recent developments, by Javier Pagés

Cava is synonymous with excellence, and its high standards are achieved thanks to the authenticity guaranteed by the traditional production method. This year, 2021, is full of fresh challenges, important steps that continue to evolve D.O. Cava’s strategy, focused on value and excellence, with the activation of the ambitious segmentation and zoning project.

Through the webinar “D.O. Cava and its recent developments” given on 26 May by the President of the Regulatory Board, Javier Pagés, the current students and alumni of the exclusive international programme specialising in wines, Wine Scholar Guild, were given a first-hand insight into the designation’s latest developments.

During the live presentation, Javier Pagés explained the four key qualitative pillars that represent the identity of Cava, followed by an explanation of the future challenges of the D.O. Cava. He offered first-hand knowledge of the new segmentation and zoning regulations, a project that embraces a sustained commitment to its territory, producers and the environment.

This seminar aroused considerable interest, drawing about 80 participants from around the world, from California to Hong Kong via Berlin, and is still available for course students and alumni course who were unable to attend the live event.
