Sustainability is one of the key elements in the new D.O. Cava segmentation and zoning regulations. Throughout the year, the "360 degrees of Cava" campaign has been transmitting the values of this exciting and challenging project to the UK market.

Master of Wine, past president of the Association of Wine Educators, and UK and China panel chair of the International Wine Challenge, Richard Bampfield closed the series of webinars with a session focusing on the common thread of sustainability in the territory and elaboration of Cava.

The round table, designed for UK trade professionals, although attended by personalities from around the world, was enthusiastically moderated by Richard Bampfield MW, and featured several D.O. Cava winemakers: Cristina Vaqués from Adernats; Gloria Collell from Freixenet and Toni Cantos from Juvé & Camps.

The special Mediterranean climate, the grape varieties ripened in optimal climatic conditions, and the balance of natural acidity in Cava are a few factors that were highlighted during the tasting of the different Cavas during the session. In addition, the fruity nose and high quality of the product that result from the traditional method of elaboration were noted. According to Richard Bampfield MW:

"The message is loud and clear: take Cava seriously, because it has much to offer".
