Cava is paired with the dishes of two-starred Basque chef Diego Guerrero

The dishes of chef Diego Guerrero, with two Michelin stars and two Repsol suns, are paired with D.O. Cava in the Basque Culinary Center’s cooking series "Cooking with stars".

The first session was held on 8 October: a top-class cooking workshop in which participants prepared a complete menu to pair with various types of Cava.

Under the guidance of chef Diego Guerrero, the 15 gastronomy lovers attending the session produced three-star dishes designed to be enjoyed with Cava. The complete menu consisted of:

- Cured cherry, basil and frozen raspberry

- Octopus llama (flame-grilled) and tomatillo

- White asparagus and coconut butter

During this gourmet evening, the participants learned innovative culinary techniques and presented a series of avant-garde dishes that can be made at home, accompanied and enhanced by a glass of Cava.

The next session of the "Cooking with stars" series will take place at the Basque Culinary Center on 5 November with chef Michel Bras, and the series will finish on 3 December with Massimo Bottura’s dishes.
