The impact of the aromas of Cava on gastronomic heritage at Auténtica Food Fest

Quiet, calm, origin, terroir, product, and producers. The perfect union exists between the aromas of Cava and gastronomic heritage, in a stellar fusion joining the harmony of Cava presented by Chartier World Lab, and the dishes of Michelin-starred chef Miguel Caño, at the Auténtica Food Fest in Seville.

In September, the D.O. Cava was present at this innovative fair, a space to stimulate the senses, and where present innovative products were presented from the perspective of respect for their origin. Rerouting from conventional sales concepts, to transmit essence, history, benefits, impact, environment, and health.

During the session, led by Nicolás Roché, Sommelier of the Chartier World Lab team, Nicolás presented to more than 50 attendees from the retail sector and large-scale distribution, the aromatic research that explains the impact of aromas on our daily lives and, specifically, on the world of gastronomy with Cava’s versatility. A selection of Cavas of each category from the following wineries was shown: Agustí Torelló Mata, Rimarts, Segura Viudas and Vins Família Ferrer.

Accompanied by the dishes of Michelin-starred chef Miguel Caño, these Cavas showed a path to creating create good to excellent harmonies. This allows us to delineate a specific zone in which to pair the distinct categories of Cava with different flavours from around the world.
