After explaining the latest developments at D.O. Cava in his article Cava becomes geographically specific, the renowned sommelier Ferran Centelles brings us another excellent article, this time the result of a blind tasting with the special participation of expert journalist and sommelier Ramón Francàs.
More than 40 references of long-aged Cavas were carefully selected for this special tasting, with the aim of showcasing the very finest Cavas and celebrating what is claimed to be "the new era of Cava".
"Cava has moved more in these last two years than in the last 30, becoming one of the strictest appellations in Europe".
As a result of this encounter, the two wine experts concluded that long-aged Cavas are extremely refined.
"The depth, complexity and versatility that these wines can acquire with age make them ideal for countless occasions."
