Fancy a themed night without things getting complicated? One of the best options is Mexican chicken fajitas, and at the Cava Regulatory Board we’d like to offer you this delicious recipe to try at home.

Ingredients

2 chicken breasts (4 pieces, if you’re buying them already cut up)
2 red peppers
2 green peppers
2 yellow peppers
1 cebolla morada
1 purple onion
2 white onions
Mexican seasoning
8 wheat tortillas
Oil
Salt

Instructions

Cut the chicken breasts into strips, and sear quickly in a large pan with a little oil. Reserve.

Cut all the different peppers and onions into strips.

Sauté the vegetables in the pan where you fried the chicken, adding a pinch of salt.

When the vegetables are cooked, add Mexican seasoning to taste. How much you use depends on how hot you want it to be.

Fry the vegetables with the seasoning for a few minutes over low heat to blend all the flavors together, stirring gently.

Add the strips of chicken to the pan and stir again. When all the ingredients are well mixed and the chicken is cooked through, remove from the heat. Serve in a bowl, so that the diners can help themselves.

Heat the tortillas, and serve on a plate.

Now that your tortillas and your bowl of chicken and vegetables are ready, all you need to do is to sit your guests around the table, and they each make their own fajita, stuffing a tortilla with chicken and vegetables. They taste great like this, but if you like you can add a bit of cheddar cheese to your fajita as well. An easy themed recipe that marries to perfection with a cava gran reserva (aged for more than 30 months).

Tips

Seasoning: Prepared seasoning mixes are the only ones that give that barbecue flavour, but if you don't want to use one of these you could replace it with a mix of spices with pepper, cayenne pepper and a bit of ginger.

Chicken: in this recipe we've made chicken fajitas, but you could replace the chicken with beef. Or you could also try a combination of chicken and beef.
