On 4 and 23 May, the D.O. Cava gave two Masterclasses on Cava at the Wine Business School of Vilafranca del Penedès.
A professional sommelier and regular collaborator of the D.O. Cava, was in charge of tutoring both master classes to learn more about Cava. They were received with great interest by the students of the Sommelier Professional Certification courses and the Professional Sommelier course.
In each training session, which lasted two hours, the focus was on the long history and tradition of Cava and its high quality, produced using the traditional method, as well as on the new segmentation and zoning regulations.
Both Masterclasses culminated in an eagerly awaited tasting of different types and styles of Cava, which revealed not only the great quality and variety of Cavas available on the market, but also their ideal service, their great versatility, and their close link with gastronomy.
In addition, for the Professional Sommelier course, taught by Sommelier Anna Casabona, Best Sommelier in Catalonia 2019, a tasting and pairing session of different categories of Cava with complementary ingredients has been proposed, following the indications of François Chartier's molecular study.
Theory is important in the study of a subject, but practice in tasting and materialisation of every concepts is key to development of a sommelier’s training.
In total, 30 Sommelier students were fully immersed in Cava, with a solid knowledge base that can serve them for the future in their professional careers.
