On Monday the 27th a very special tasting was held at the Spanish Union of Tasters to promote the Cavas de Elaboración Integral (Complete Production) seal.
The Masterclass, taught by the prestigious Master of Wine Pedro Ballesteros, entitled "Cavas de elaboradores integrales: garantía de propiedad" (Cavas from complete producers: guaranteed proprietorship) drew about thirty attendees, who learned first-hand about some of the wineries that already boast this new and distinctive certification.
With this seal the Cava Designation of Origin's Regulatory Council distinguishes those producers who make their Cavas 100% on-site (pressing and winemaking). In this way, it certifies that all production is carried out on the same land. There are already 15 wineries certified with this new seal, which provides consumers with a strong guarantee of traceability.
