Ingredients

20 ml vodka
15 ml white vermouth
70 ml apple and camomile Kombucha
20 ml bergamot liquor
1 cup of Cava de Guarda Superior Reserva
To garnish: Apple flower Mallow flower

Instructions

Mix the vodka infusion with tulsi (a kind of purple basil with a hint of aniseed), bergamot liqueur and white vermouth.

Mix the apple and chamomile Kombucha and the Cava and koji cordial.

Mix all the ingredients together, and shake.

Finish off with a Cava de Guarda Superior Reserva, which will add slightly dry, woody notes that will bring a little more complexity to the cocktail.
