This recipe can be enjoyed anytime! Whether served as hors d'oeuvres, an appetizer, or at brunch, pair it with a D.O. Cava de Guarda Superior Reserva, it could be white or rosé. The delicated bubbles will blend perfectly with the creaminess of the cheese, the saltiness of the ham, and the acidity and sweetness of the tomatoes, making any occasion, just perfect!
Ingredients
32 oz. of Whole Milk Organic Greek Yogurt, organic
8-10 long slices Jamón ConsorcioSerrano
1 cup Heirloom Cheery tomatoes
3 tbsp Olive Oil
1 tbsp Balsamic Vinegar
1 clove of garlic
Fresh Thyme
Honey or micro greens (optional)
Salt to taste

Prepare the Cheese: Pour the yogurt into a large bowl and stir in the salt.

Line another large bowl with linen or cheesecloth. Pour the yogurt mixture into the cloth, tie it at the top, and place it in a colander to drain for 8-10 hours.

Set it aside on the counter and then transfer it to the fridge until ready to serve.

Roast the Tomatoes: Preheat the oven to 400°F (200°C). On a sheet pan covered with aluminum foil, add the tomatoes.

Sprinkle with olive oil, vinegar, thyme, garlic, salt, and pepper. Toss to coat.

Roast in the oven for 10 minutes.

Spread the cheese on a plate. Add the tomatoes in the center or on one side.

Add a few slices of Jamón ConsorcioSerrano, more thyme, micro greens or olive oil, and honey (optional).

Serve with fresh baguette, pita, or fresh veggies for dipping and pair with a glass of Cava de Guarda Superior Gran Reserva.
